Shrimp Tacos with Fig Salsa

1 lb peeled and deveined large shrimp

Ingredients

1 seeded and finely chopped jalapeno pepper

1/2 cup diced red onion

1/2 cup diced fresh figs

Juice of one lime

Salt and pepper to taste

8 corn tortillas

Cilantro for garnish

Fry shrimp until pink and cooked through

Procedure

Mix washed & diced figs, red onion & jalapeno pepper with lime juice in a bowl

Place cooked shrimp on tortillas and top with fig salsa

Garnish with cilantro
