Fig & Lemon Curd Tart

1/2 cup dried figs

Ingredients

1 pie crust

1/2 cup lemon juice

1/4 cup sugar 2 eggs

Preheat oven to 350°F

Procedure

Cook lemon juice, sugar, and eggs in a saucepan until thickened

Pour into the pie crust and layer with chopped figs

Bake for 25 minutes

Cool before slicing and serving
