Fig and Shrimp Pad Thai
1 lb peeled and deveined shrimp
Ingredients
2 fresh or dried figs
1 cup rice noodles
2 tbsp fish sauce
2 tbsp tamarind paste
1 tbsp palm sugar
Peanuts and lime wedges for garnish
Wash figs then cut into slices
Procedure
Sauté sliced figs in a little oil until
caramelized
Stir-fry cooked noodles with tamarind paste, fish sauce, palm sugar, shrimp, and caramelized figs.
Garnish with peanuts and lime wedges
