Fig and Beef Pho

1 lb beef thinly sliced (rare steak or brisket)

Ingredients

4 ripe figs pureed

Fresh herbs basil, mint, bean sprouts, lime wedges

2 cups beef broth

1 cup rice noodles

Wash figs and blend them to get puree

Procedure

Soak rice noodles then Heat beef broth with pureed figs until warm

Cook sliced beef in hot broth for a few seconds to cook through

Place cooked noodles in a bowl, add cooked beef

Pour over the fig-infused broth, and top with fresh herbs, bean sprouts, and lime wedges.
