🥘 Fig and Pistachio Breakfast Biscotti Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- Pinch of salt
- 3 large eggs🥚
- 2 tbsp olive oil
- 1 tsp vanilla extract 🌺
- 1 tsp almond extract
- 1 cup chopped dried figs🍬
- 1 cup chopped pistachios
- 1 lemon juice🍋
Soaking figs in water
Soaking softens the dried figs, making them easier to eat and digest. Incase if you don’t have fresh figs then always there is other option dried figs. It may also help reduce their sugar concentration and enhance nutrient absorption.
🧑🍳 Lets prepare it…
- Preheat oven about to temperature 350°F (175°C). It’s about to get hotter than a summer walkway in here! 🌡️
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. Mix well to get smooth texture and all ingredients should be perfectly mixed! 🏖️
- In another bowl, beat the eggs & mix with olive oil, vanilla extract, and almond extract. Whisk it get completely one single form of yellow liquid! 🥇
- Pour the wet ingredients into the dry ones and stir until just combined together and get a little fluffy mixture. Use your whisker properly and get the beautiful mixture! 🛁
- Fold it in the chopped figs, pistachios, and lemon zest. Its like a figs are your VIP guests entered into your biscotti bash! 🎉
- In a baking sheet, divide the dough in half and shape each half into a log about 12 inches long. They should look like delicious, clumpy surfs! 🏄♀
- Bake for 25-30 minutes, until the logs are lightly golden brown and firm to the touch. They should be tan but not to burnt. Now we’re going for “beach Party,” so do not “forgot the sunscreen”! 🌞
- Let the logs cool for about 10 minutes, then slice them diagonally into 1/2 inch thick pieces or slice as you like to design it. It’s like you are giving stylish haircut to your biscotti ! ✂️
- Keep the slices flat on the baking sheet and bake for another 10-15 minutes on each side, until they’re crisp and golden. We’re going for crunchy and little brownish color, not to break your teeth! 😬
